
Coffee culture flourished around the world during the 20th century, thanks in large part to the migration of Italians. They invented and perfected the espresso machine, then exported their shot-based drink culture wherever they settled. For years, Italians leaned into dark-roasted Robusta for their morning ritual at espresso counters, plunking down a euro or two for shots or macchiatos. Recently, Italians embraced single-origin espresso and filter coffee, and Milan has proven fertile ground for this trend. One of the leading companies is Cafezal, a roaster with four stylish shops.
